INGREDIENTS
500 g pumpkin (cleaned and diced)
2 tbsp olive oil
1 small onion (chopped)
2 garlic cloves (minced)
100 ml Storica Bianca
Salt and pepper to taste
Fresh rosemary (or sage) for garnish
grated Parmesan cheese (optional)
METHOD
Step 1
Clean the pumpkin, removing the skin and seeds. Cut it into cubes.
In a large frying pan, heat the olive oil over medium heat. Add the onion and garlic until frying them until the onion becomes transparent.
Add the pumpkin cubes to the pan and mix well. Cook for about 10-15 minutes, until the pumpkin starts to soften.
Step 2
Pour the grappa into the pan and turn up the heat. Allow the alcohol to evaporate for a few minutes, stirring occasionally.
Add salt, pepper and, if desired, a little chopped rosemary or sage. Continue cooking until the pumpkin is tender and tasty, about another 5-10 minutes.
The pumpkin can be served hot, garnished with a little fresh rosemary and a sprinkling of grated Parmesan cheese.
Tip
This recipe is also very tasty as a side dish for meat or as a filling for ravioli!
